(easy) bbq chicken sliders.

i have to admit that this is probably one of the easiest and tastiest meals we've had in a long.time. please though, keep in mine that the "healthy" serving of mac & cheese is not so calorie-friendly. however, everyone deserves a delicious home-style meal every now and then!

i based our meal from this original recipe.

here's what you'll need: (this is how we made it at home!)

  • your favorite bbq sauce
  • 1-2 lbs chicken breasts
  • 12 pack of Kings Hawaiian Sweet Rolls

what to do:
1. put the chicken breasts in the crockpot

2. drown those chicken breasts in bbq sauce.  (i like mine super saucy - probably used at least half a bottle?)

3. set the crockpot to low for 6 hours (our crockpot will then kick to the "keep warm" setting) or on high for 3-4 hours

4. once the chicken is full cooked, shred with a fork (add more bbq sauce if you feel like you need to. like me.)

5. slice the dinner rolls in half and scoop up some of the shredded chicken.  add half a slice of cheese if you want and you're all set.

6. try not to eat them all!

we decided to serve our sliders with some nice and creamy mac & cheese. it seemed like the perfect match!

i feel like this would be a delightful 4th of july meal to enjoy with family.  you could very easily double or triple the recipe and as long as you have enough rolls to accommodate the amount of chicken.... you could feed as many people as you want!  without the hassle!

i will really have to remember this one.  it is super simple for busy families and oh-so-delicious.  for me, bbq dinners will never get old!

what's your favorite bbq recipe?! i'd love to hear it!

For those that are interested, here's the nutritional information according how we make the recipe at home.

p.s. i'd like to mention that this meal is also very family/kid friendly!  jackson really enjoyed the bbq chicken.  he likes to keep his roll separate from the chicken but really likes both.  also. what toddler doesn't love some mac & cheese?!

happy thursday!
